The Perfect Mug Cake for When You Just Need Cake
If you’ve got a microwave, a (fairly) stocked pantry, and a mug… then you can make a cake!
A friend of mine said this to me the other day: “I just need a cake recipe for lazy people because I don’t like to cook.” She’s in her teens, so I assured her that hobbies like cooking would come to her in the next 10-15 years and that she didn’t need to worry. AND, I did indeed have a cake recipe for her. Enter the mug cake.
Mug cakes had a moment in 2019, but I think it’s time to bring them back, and here’s why:
I’m a stay-at-home mother with three kids, a few acres, seven chickens, two businesses, and a home to run. I live for treating myself—and I live for cake. More often than not, the mug cake is the perfect treat for me! It’s an easy recipe. It’s delicious. And it’s all made in one container (a mug!), so the cleanup is negligible. The benefits are endless, in my opinion!
You’ll find me making a mug cake (chocolate, specifically!) once my kids are down and my partner and I have a few moments of chill time on the couch. Heck, some days, after my daughter has gone down for her nap, I’ll make one for myself! Cake doesn’t always have to be elaborate—I actually prefer rustic cakes when I get fancy—but sometimes we all just crave a little something sweet.
So, here’s your perfect mug cake recipe and it’ll take you a grand total of 3 minutes to make!
CHOCOLATE MUG CAKE
This recipe is based on a traditional chocolate cake recipe - using granulated sugar, vegetable oil, all purpose flour & cocoa powder!
Ingredients
3 Tablespoons AP Flour
1 1/2 Tablespoons Cocoa Powder
1 Small Pinch of Salt
1/4 Teaspoon Baking Powder
2 Teaspoons Sugar
1 egg
2 Teaspoons Oil
1/2 Teaspoon Vanilla Extract
Splash of Milk (if needed)
Method
Stir together Flour, Cocoa Powder, Baking Powder & Salt. Add Sugar, Egg, Oil & Vanilla Extract and still until combined into a cake batter-like consistency. If the mixture is too thick, add a splash of milk (or cream..whatever you’ve got!) of your choice.
Microwave for 50 Seconds or 1 Minute, keeping in mind all microwaves are different. You might need an additional 10 seconds or so.
Check for done-ness by tapping top of cake; if it bounces back it’s done!
Additional steps here are to add a few chocolate chips into your batter. Also, feel free to substitute cocoa powder for Nesquick (a friend tried this and loved it!) or Cacao! I love to top mine with fruit & a splash of cream!
